Summer Salad - Recipe

It's April in South Florida, which means...Summer is here! Here is a fun, filling and refreshing salad that will keep your energy up to continue bike riding, running and swimming all day long! Super simple, quick and easy...No cooking required....Fresh, organic produce from the Earth!

Summer Salad:
Cook up chick peas separately and set aside to cool.
Chop up and mix together: avocado, red onion, cucumber, red bell peppers, tomato. Add in chick peas. Toss and top with lime juice, chopped cilantro and feta cheese.
Optional Dressing: 1/3 cup EVOO, 1/4 tsp cayenne pepper, 1-2 garlic cloves, minced, Juice of 1 lime, sea salt and pepper to taste. Shake up and pour over salad.


This salad made for quite a romantic dinner, with white wine, good music and the windows open! Nolan enjoyed it, especially the avacado and chick peas. You can add more or less depending on how many people you are feeding. This could also be yummy in a wrap or pita, or over pasta (rice or quinoa pasta).
